SATURDAY BEEF & BOURBON DINNER MENU

1st   Bites For the Table
Watermelon and goat cheese skewers, basil, balsamic
Smoked deckel tacos, pickled daikon and carrot, salsa verde, avocado crema, lime, cilantro
Paired with Iron Fish Stout Bourbon Cocktail - Rails and Tails
Imperial Stout bourbon, cacao nib syrup, chocolate bitters, garnished with carnalized orange peel

2nd
Roasted marrow bone – gremolata, red onion marmalade, cornichon, garlic butter crostini 
Paired with Iron Fish Four Cask Bourbon Cocktail – Brown Derby
Iron Fish Four Cask, honey simple syrup, lemon juice, grapefruit juice, garnished with grapefruit wheel

Intermezzo – honeydew basil sorbet, candied blood orange

3rd 
Char-grilled ribeye – 40-day bourbon infused dry aged USDA prime beef, coffee bbq rub, black garlic reduction, fresh horseradish, roasted asparagus and foraged mushrooms, confit fingerling, watercress 
Paired with Iron Fish Mezcal Bourbon Cocktail – Poco Loco
Mezcal Bourbon, fresh pineapple juice, lime juice, guajillo pepper syrup,  garnished with pineapple

“Dessert” – charcuterie and cheese, chocolate covered figs, cherry mostarda, rosemary crackers, other chef inspired fixings
