Jamaican Chef at Aerie Join us Saturday, October 13, as we celebrate our staff and friends from Jamaica. Each year staff members join us from Jamaica, helping to fill positions in almost every department in the Resort. They are an integral part of our staff with many Jamaican team members returning to the Resort year after year. This year we are celebrating their contribution and home country with a very special event.

For one night only, Aerie Restaurant will feature all the flavors of Jamaica in a custom menu created and prepared by Jamaican members of our staff. The six chefs—Calvia Sharpe, Lisa Lawrence, Rose Henry, Lezma Stephenson, Charmaine Gordon Griffiths, and Tony Dinham—will prepare authentic Jamaican dishes that are, as they put it, “seasoned to the bone,” a reflection of how Jamaican fare is robustly seasoned with fresh herbs and spices. Specialty Jamaican cocktails and beverages will be available for sale.

Jamaican Dinner SaladCourse One

 

 Jerked Chicken Wings – coleslaw, papaya chutney
Fish Tea Soup – conch, red snapper, potatoes, carrot, squash, and chayote
Island Salad – lettuces, red onion, tomato, cucumber, fresh mango dressing
BBQ Shrimp – festival fried dumplings, house BBQ sauce

Course Two

Jerk Pork Shoulder – rice and peas, house jerk sauce, roasted yams
Red Snapper – coconut rundown sauce, peppers, onions, fried plantain
Goat Brown Stew – potatoes, carrot, house dumplings, garlic, rice, and peas
Jackfruit Curry – peppers, onions, scallion, garlic, ginger, callaloo rice

Course Three

Jamaican Fruit Cake – rum soaked, fresh fruit, whipped cream
Cherry Bread Pudding – candied almonds, Baileys sauce

Drink Menu

Yellow Bird $8
A classic resort favorite from Jamaica. We blend Bacardi Silver Rum, Cointreau orange liqueur, Galliano, and fresh squeezed lime juice. Shaken hard and strained into a martini glass.

Jamaican Breeze $6
Fresh muddled ginger topped with Myers's Dark Rum, pineapple juice, house made simple syrup, and touch of angostura bitters. Shaken and strained, poured over fresh ice and garnished with a lime wheel.

Jamaican Crawler $6
A blend of Bacardi Silver Rum, melon liqueur, and pineapple juice with a splash of house made grenadine floated over the top.

Rum Punch $8
Everyone’s favorite punch. A blend of Bacardi Silver, Myers's Dark Rum, and Malibu Coconut Rum topped with pineapple, orange, and lime juice with a grenadine float. Served in a martini glass

Bob Marley Shot $6
A tall shot glass with layers of house made grenadine, banana and melon liqueurs.

The Frozen Hummingbird $8
Baileys Irish Cream, Kahlua coffee liqueur, cream, house made grenadine, and fresh banana. Served crushed and frozen in a frosty pint.

We will also offer a limited traditional menu on this day.
